Japanese Ikeuchi Kiridashi knives have a hollow grind and a special hard and fine-grained Aogami steel with a hardness of HRC 63, which is forged with a soft carrier steel. This means that these Japanese Kiridashi knives retain their sharpness for a long time and are easy to sharpen at the same time. As a special quality feature, these Japanese Kiridashi knives have a black forged skin and an elaborate hammered surface structure.

Japanese Ikeuchi Kiridashi knives from the master forge

The Kiridashi knives are hand-forged by the Japanese master smith Hiromi Ikeuchi. Ikeuchi Knives with Mr. Ikeuchi has a long 70 year tradition.

Finely forged by hand, the blade is made of blue carbon steel Aogami (HRC 63) and a soft carrier steel. All mesers are hand forged and the surface is hammered with the beautiful texture.
